MAKE A DOUBLE BOILER CALLED “BAIN MARIE” IN FRENCH AND “BANO DE MARIA” IN SPANISH (USE WHICHEVER TONGUE YOU LIKE). IT MAY SEEM MORE COMPLICATED THAN IT SEEMS BUT ALL IT DOES IS KEEP THE TEMPERATURE CONSTANT AND LOW SO THAT THE EGGS STAY MOIST.

ALL YOU HAVE TO DO IS ADD WATER TO A MEDIUM-LARGE SAUCEPAN AND ADD A HEAT RESISTANT BOWL ON TOP MAKING SURE THE BOWL DOES NOT TOUCH THE WATER. TURN HEAT ON HIGH.

ONCE WATER STARTS BOILING, ADD COCONUT OIL AND MELT, COATING LOWER HALF OF BOWL. CRACK IN EGGS AND START WHIPPING WITH A WHISK OR YOUR FAVORITE WHIPPING TOOL!  ADD IN SALT AND PEPPER. CONSTANTLY STIR AND WHEN SMALL CURDS START TO FORM, START CLEANING UP THE RIM WITH A SPATULA CONTINUING TO MOVE THE EGG MIXTURE. MAKE SURE TO SELECT THE SIZE OF THE CARROT THAT MOST RESEMBLES A HOT DOG.  I PREFER THEM TO BE ON THE THICK SIDE.

WASH AND THEN CHOP OFF THE ENDS OF THE CARROTS. PEEL THE SKIN BACK AND SAVE THE PEELS TO MAKE CARROT CAKE, MUFFINS, OR VEGETABLE STOCK.

IN A MEDIUM TO LARGE SAUCEPAN, POUR IN THE OLIVE OIL, AND ADD THE CARROTS

START BUILDING AN UMAMI FLAVOR BY POURING VEGETABLE STOCK, TAMARI SAUCE/LIQUID AMINOS, MAPLE SYRUP, LIQUID SMOKE, APPLE CIDER VINEGAR, GROUND GARLIC, AND SMOKED PAPRIKA.

MIX OVER A MEDIUM TO HIGH HEAT, CONSTANTLY COATING THE CARROTS IN THE UMAMI BASE.  

ONCE IT STARTS BOILING, TURN DOWN TO LOW AND COVER IT. STIR OCCASIONALLY MAKING SURE THE UMAMI BASE DOESN’T SCORCH BUT EVAPORATES TO A NICE STICKY BROWN GOO ON THE CARROTS.

FINISH THE HOT DOGS OFF ON A HOT CAST IRON GRILL OR ON AN ACTUAL GRILL TO MAKE THE GRILL MARKS.

SLIDE YOUR HOT DOG IN A GLUTEN FREE BUN OR WRAP IN YOUR FAVORITE GREEN.

SPANK IN THE SWEET STICKY PITTED DATES AND CONTINUE TO MIX.

SPLASH THE BALLS WITH THE WET INGREDIENT: VANILLA EXTRACT (I JUST FOUND OUT ABOUT VANILLA POWDER WHICH SEEMS HEALTHIER THAN VANILLA EXTRACT SINCE IT COMES RAW AND WITHOUT ALCOHOL. GIVE IT A TRY IF YOU DON’T ALREADY HAVE THE WET STUFF!)

ONCE EVERYTHING GETS MIXED UP EVENLY, THE MIXTURE MAY TURN INTO A GIANT BALL INSIDE YOUR MACHINE.  

TAKE OUT THE STICKY MASS AND SCOOP OUT SMALL BITS ROLLING THEM INTO SMOOTH BALLS IN YOUR HANDS AND PLACING THEM ON A TRAY LINED WITH PARCHMENT PAPER OR A SILPAT MAT.  YOU CAN LITERALLY MAKE THE BALLS ANY SIZE YOU WANT BUT I REALLY LIKE THEM BITE SIZED OR A SIZE THAT YOU CAN FIT AT LEAST TWO IN YOUR MOUTH AT THE SAME TIME.

IN A SHALLOW BOWL LINED WITH SEA SALT, ROLL THE BALLS AROUND SO THEY GET LIGHTLY SPRINKLED IN SALT AND READY TO BE LICKED.

YOU CAN DO IT WITH YOUR HANDS AND A GRATER BUT SOMETIMES MY ARMS GET TOO TIRED SO I LIKE TAKING OUT MY FAVORITE KITCHEN TOY AND SHRED IT WITH MY FOOD PROCESSOR.  IT IS EFFICIENT AND GETS IT DONE IN A MATTER OF SECONDS! JUST DON’T OVERDO IT BECAUSE IT WILL TURN MUSHY. IF YOU DON’T HAVE A HAND SHREDDER OR FOOD PROCESSOR THERE IS THE PRE SHREDDED CAULIFLOWER AT TRADER JOES BUT I LIKE TO THINK PRE-SHRED IS A LAZINESS DISEASE.

 

HEAT THE HIGH SMOKE POINT OIL IN A HOT WOK OR LARGE SAUCE PAN. OVER A MEDIUM TO HIGH HEAT, ADD THE CHOPPED SCALLIONS AND STIR THEM UNTIL THEY TURN A VIBRANT GREEN. ADD IN ALL THE VEGGIES, MUSHROOMS, SHREDDED CARROTS, SNAP PEAS, AND LASTLY THE CAULIFLOWER “RICE” AND CONTINUE TO STIR FRY 3-5 MINUTES WHILE ADDING IN TAMARI SAUCE AND SESAME OIL.

For some reason the word “roast” can be intimidating.  Don’t let that word fool you.  It’s just a fancy way of saying “I put it in the oven at a medium high heat and managed to not burn it to hell!”  Roasting is actually very easy to do and gives you a big wow/yum for minimal effort which is soooo the Ciao Downtown way of cooking!!!

The fall and winter are the best time to roast all the in season veggies and herbs.  I like to go to the Union Square farmers market and get produce and fresh herbs from organic or no spray vendors like Hawthorne Valley Farms, Keith’s Organics, or Windfall Farm to name a few.  Any combo of hearty vegetables and herbs like these will do but these ones I chose because their cooking times are fairly similar and their taste is very complimentary!
