SUCK THEM, LICK THEM, BITE THEM OFF BY MAKING A SWEET CHILLED TREAT THAT WILL MELT IN YOUR MOUTH, HANDS AND ANYWHERE ELSE YOU WANT TO PUT IT BESIDES A FREEZER (UNLESS YOU ARE AN ICE QUEEN). THESE VEGAN CHERRY ICE POPS WITH CHERRIES, ALMOND MILK, CACAO NIBS, AND VANILLA PROVE THAT THIS CHERRY POPPING RECIPE WILL LEAVE YOU IN A PUDDLE.

INGREDIENTS

  • 2 CUPS ALMOND MILK
  • ANY NUTS WILL DO BUT I PREFER ALMONDS FOR THIS RECIPE BECAUSE THEY HAVE A MARZIPAN FLAVOR THAT COMPLIMENT THE CHERRIES AND CACAO.
  • 2 CUPS FRESH HALVED AND PITTED CHERRIES (FROZEN CHERRIES WILL ALSO DO)
  • 1/2 CUP CACAO NIBS
  • GET A CHOCOLATE CRUNCH THAT IS PACKED WITH IRON AND FIBER WITHOUT THE ADDED SUGAR OF REGULAR CHOCOLATE CHIPS!
  • 2-3 PITTED DATES
  • 1 SCRAPED VANILLA BEAN OR 1/2 TSP VANILLA POWDER
  • 1/2 TSP CINNAMON

INSTRUCTIONS

IN A BLENDER ADD ALMOND MILK, DATES, VANILLA, AND CINNAMON AND BLEND ON HIGH. IF YOU WANTED TO STOP HERE, YOU COULD JUST ENJOY THIS AS A FLAVORED CREAMER TO YOUR COFFEE OR GRANOLA, BUT WE ARE MAKING ICE POPS SO DON’T GET IT TWISTED!

IN THE ICE POP MOLD DISTRIBUTE THE CHERRIES AND CACAO NIBS EVENLY.  THEY SHOULD FILL THE ICE POP CAVITY UP ABOUT HALF WAY MORE OR LESS.

FINISH THE POPS BY POURING IN THE DREAMY CREAMY ALMOND MILK MIXTURE. POP IN THE FREEZER FOR A FEW HOURS OR UNTIL THEY ARE HARD (IT SEEMS WE ARE ALWAYS WAITING TO ACHIEVE THAT). THEN WIGGLE THEM OUT AND POP THEM IN YOUR MOUTH!
